Carrot salad with almonds and lemon

    • 1 lemon, juiced
    • 1 tablespoon olive oil
    • 1 tablespoon white wine vinegar
    • 1 handful finely chopped almonds
    • salt and ground black pepper
    • 5 large fresh carrots, peeled and grated

    1. In a bowl, whisk together the lemon juice, olive oil, vinegar, almonds, salt and pepper. Pour over the grated carrots and serve cold.
