    About this recipe: I first tried this pancake recipe during a year of international cooking in 4-H. We loved them so much, that we've been making them ever since. Although perfect with jam, these pancakes really don't need anything with them. Great for breakfast or for a dessert!

    Serves: 3 

    • 6 eggs
    • 100g sugar
    • 225ml milk
    • 1/4 teaspoon salt
    • 125g plain flour
    • 1/2 teaspoon baking powder
    • 1 tablespoon melted butter
    • 1/8 teaspoon vanilla
    • butter or olive oil for frying

    1. Beat eggs until light.
    2. Add rest of ingredients (except for the butter or oil for frying) and beat thoroughly. Batter should be very thin.
    3. Heat pancake pan until quite hot. Melt some butter and/or olive oil to keep pancakes from sticking.
    4. Pour about 75 to 120ml of batter at a time into the pan, rotating the pan to spread the batter well. Pancakes should be large and thin.
    5. When pancakes appear dry on top and slightly browned underneath (should only take 1 minute or so), flip the pancake over to cook the other side (only takes a few seconds!)
    6. Serve with jam or butter and sugar. Roll up and eat.
