    About this recipe: This strawberry and cream cake is a summery and delicate sponge cake idea for a birthday party.

    Ingredients
    Serves: 8 

    • 4 eggs, separated
    • 1/2 glass of sugar
    • 1 tablespoon vinegar (cider would be best)
    • 1/2 tablespoon baking powder
    • 1 glass of flour
    • 500g strawberries
    • 500ml of whipping cream
    • 1/2 glass boiled water
    • 1 lemon
    • 2 tablespoons vodka
    • 3 tablespoons icing sugar

    Method

    1. Beat the egg whites with the sugar until you get a firm and creamy consistency. In a separate bowl, beat the yolks with the vinegar and the baking powder.
    2. Combine the egg whites and the yolks and gently fold in the sifted flour, incorporating it well. Pour the mixture into a greased round baking tin.
    3. Bake in a preheated oven at 160 C / Gas 3 for 35-40 minutes until the top is slightly golden. Take it out of the oven and let it cool down.
    4. In the meantime clean and wash the strawberries and whisk the cream to a firm consistency. Cut the sponge lengthwise into three discs and moisten them with the syrup. Cut some of the strawberries into halves. Spread some whipped cream on the first disc and put some strawberries halves on top. Cover with another disc and make another layer with strawberries and cream. Put the third disc on top and then spread the cream all over the cake. Decorate with some whole strawberries and mint leaves. Store it in the fridge. Yum!
    5. Make a syrup to moisten the sponge by mixing together the boiled water, the juice of one lemon, vodka and icing sugar.
    6. Cut the cooled sponge lengthways into three discs and moisten them with the syrup.
    7. Cut some of the strawberries into halves. Spread some whipped cream on the first disc and put some strawberries halves on top. Cover with another disc and make another layer with strawberries and cream. Put the third disc on top and then spread the cream all over the cake.
    8. Decorate with some whole strawberries and mint leaves. Store it in the fridge. Yum!
