Raw vegetable plate with yoghurt herb dip

    Nothing is easier than assembling your own veg plate and whipping up an herb dip without any preservatives or food additives.

    Ingredients
    Serves: 8 

    • 1 bunch radishes
    • 1 red pepper
    • 1 green pepper
    • 1 yellow pepper
    • 1 cucumber
    • 1 courgette
    • 500g carrots
    • 1 celery stalk
    • cauliflower and broccoli florets
    • For the herb dip
    • 500g natural yoghurt
    • 3 tablespoons olive oil
    • 3 tablespoons lemon juice
    • 1 small onion, minced
    • 1 garlic clove, pushed through the garlic press
    • 1 bunch fresh dill, minced
    • 1 bunch fresh parsley, minced
    • 1 bunch fresh basil, minced
    • salt
    • pepper
    • sugar

    Method

    1. Wash, trim and slice veg or cut into even pieces. Arrange on a a large plate.
    2. In a bowl stir yoghurt with olive oil and lemon juice till smooth. Add the remaining ingredients and season to taste. Serve alongside the veg. For a nice presentation, leave two pepper halves uncut and fill them with the dip to serve.
