Chicken breast with mango sauce

    Mango and chicken go very well together and this dish is no exception! This is also a great one-pot dish saving you loads of washing up - extra bonus!

    Serves: 2 

    • 1 tablespoon oil
    • 1 onion, chopped
    • 2 garlic cloves, minced
    • 1 green chilli pepper, seeded and minced
    • 2 mangos - peeled, stoned and diced
    • 2 tablespoons caster sugar
    • 1 tablespoon red wine vinegar
    • 2 tablespoons sherry vinegar
    • 200ml water
    • 2 boneless, skinless chicken breast fillets
    • salt and pepper, to taste

    1. Preheat oven to 190 C / Gas 5.
    2. Heat oil in a small ovenproof casserole dish over a medium-high heat and cook onion, garlic and chilli for 5 minutes stirring constantly. Add mango, sugar, vinegars and water to the pan, stir and bring to the boil. Reduce the heat and simmer for 10 minutes.
    3. Sprinkle chicken with salt and pepper and put on top of the mango chutney in the pan. Spoon some of the chutney on top of the meat and put the pan in the oven.
    4. Bake for 35 minutes in the preheated oven. Turn once after 15 minutes and bake until the chicken is no longer pink in the centre. Remove from the oven and serve.

    I could not understand the recipe method add mangoe, sugar, vinegar & water to pan + add mango chutney what vinegar how much water & mango chutney they are not on ingredients list please unable to star rate recipe as I have still to make ithelp  -  09 Oct 2014
