Red cabbage Danish style

    Red cabbage is a traditional side dish for the Christmas dinner in Denmark. It is served with poultry or roast pork.

    • 2.5kg red cabbage
    • 750ml white wine vinegar
    • 750ml water
    • salt
    • pepper
    • 100g granulated sugar

    1. Remove the outer leaves of the cabbage. Quarter and remove the core. Cut into fine strips.
    2. Place in a large pot with vinegar and water. Cook uncovered for 30 minutes. Add salt, pepper and sugar and cook for a further 30 minutes.
