Iced tea can be weak in flavour, especially served over ice, so it's important to brew the tea stronger than you normally would. The addition of lemon and mint also add refreshing flavour, perfect for a summer's day!

2 tea bags
1 bunch fresh mint, chopped
2 tablespoons muscovado sugar
1 lemon, zested and juiced
4 mint sprigs
4 lemon slices

Bring the water to the boil and pour into a heatproof jug with the teabags, chopped mint, muscovado sugar and lemon zest. Let the tea infuse for a good 20 minutes.
When the tea is cooled, add the lemon juice, and pour the tea through a sieve. Pour into large glasses half filled with crushed ice. Decorate each glass with a mint sprig and a lemon slice. Serve very cold.
