    About this recipe: This is a cheap and easy vegan meal made in the slow cooker. Hearty beans and barley for a warming meal. You could use almost any bean for this dish.

    Serves: 2 

    • 1 tablespoon olive oil
    • 1 onion, chopped
    • 1 stick celery, chopped
    • 3 garlic cloves, minced
    • 1 (400g) tin chopped tomatoes
    • 1 (400g) tin red kidney beans
    • 225ml vegetable stock
    • 4 tablespoons pearl barley
    • 1 tablespoon mushroom ketchup
    • 1 bay leaf
    • salt and pepper

    1. In a saucepan, cook onion, celery and garlic in oil over medium heat until soft.
    2. Add remaining ingredients. Empty mixture into a 2 litre slow cooker and cook on low for 6 to 7 hours. Adjust salt and pepper to taste.

    Everyone liked this recipe ,including my meat eating daughter. I didn't have any mushroom ketchup so added 1tbs of miso paste to the stock. I also had to double the liquid stated in the recipe.  -  27 Feb 2017
