White chocolate and raspberry bars

    Makes: 12 bars

    • 100g brown sugar
    • 2 tablespoons golden syrup
    • 375g oats
    • 75g white chocolate chips
    • 2 handfuls raspberries
    • 25g white chocolate

    Prep:35min  ›  Cook:15min  ›  Extra time:40min cooling  ›  Ready in:1hr30min 

    1. Lay out all your ingredients on the counter / surface.
    2. Preheat the oven to 180 C / Gas 4.
    3. Melt the sugar and golden syrup in a pan until a thick liquid.
    4. Once golden syrup and sugar have melted add the liquid to the oats and mix well.
    5. After properly mixed; add the white chocolate chips and raspberries. Mix the white chocolate chips and the raspberries in with the oats and liquid until one mixture.
    6. Spread out on a 20x16cm tray that is about 2 inches tall.
    7. Bake in the oven for 15-20 minutes until golden brown.
    8. Wait for it to cool, then cut up into rectangles.
    9. Now you must melt the 25g of white chocolate in a pan until it is a liquid.
    10. Drizzle the white chocolate lightly of to the rectangles and put into the fridge to cool.

    My mum and I made it but had to add double the sugar (100gx2) and double the golden syrup (4 tablespoons) because there was too much oats in the recipe. It was still quite dry after adding the extras. Other than that it smelt and taste lovely!!  -  13 Jan 2014
