Chocolate lava cakes with whisky


    There is nothing better, than a hot chocolate lava cake fresh from the oven. I serve mine with fresh strawberries. What a delight!

    Serves: 4 

    • 125g unsalted butter
    • 100g plain chocolate
    • 2 tablespoons whisky
    • 2 eggs
    • 2 egg yolks
    • 4 tablespoons caster sugar
    • 2 teaspoons unsweetened cocoa powder
    • 2 tablespoons plain flour
    • 8 strawberries, quartered

    1. Preheat oven to 200 C / Gas 6 and grease 4 ramekins.
    2. In a double boiler melt butter and chocolate. Add whisky and stir until well combined and smooth.
    3. In a bowl beat eggs, egg yolks and sugar until light and fluffy and the sugar has dissolved. Slowly stir in chocolate mixture and mix with cocoa and flour until just combined. Try not to overmix.
    4. Evenly distribute the mixture between the 4 ramekins.
    5. Bake for 10 minutes until top is set. Garnish with strawberries and serve immediately.
