Sweet potato chips with lemon thyme

    The lemon thyme beautifully compliments the taste of the sweet potato for a lovely variation on our national favourite, the chip.

    Serves: 4 

    • 2 large sweet potatoes, peeled and cut into chips
    • 2 tablespoons olive oil
    • 3 to 4 sprigs fresh lemon thyme, chopped
    • sea salt, to taste

    1. Preheat oven to 180 C / Gas 4. Place a sheet of baking parchment on a baking tray.
    2. In a bowl combine sweet potato chips, oil, thyme and salt and mix well. Spread in a single layer onto the prepared baking tray.
    3. Bake for 45 to 60 minutes in the preheated oven until soft inside and crispy outside. Stir from time to time to cook them evenly. Remove from the oven and serve immediately.

    Really easy to do and very tasty. I would be cautious on time to bake these - it took around 30-40mins.  -  30 Oct 2016
