Chilli chicken Kiev

    Tasty low fat alternative to normal chicken Kiev. Serve with mixed salad for a deliciously healthy chicken meal.

    Serves: 4 

    • 4 skinless chicken breasts
    • salt and pepper to taste
    • 2 cloves of garlic
    • 2 red chillies
    • 100g quark
    • 2 teaspoons ground ginger
    • 12 slices wholemeal nimble bread
    • 3 eggs
    • fry light spray

    1. Pre heat oven 200 C / Gas 6.
    2. Make a slit across each chicken breast to make a pocket. Season well with salt and pepper and set aside.
    3. Crush garlic, deseed and finely chop chillies, then stir into quark and add ginger to mixture. Stuff evenly into the chicken pockets.
    4. Place bread into mixer and make breadcrumbs. Beat eggs and brush over chicken then roll chicken evenly in the breadcrumbs.
    5. Place on baking tray and spray with fry light and bake for 20 to 25 minutes until golden.
