Almond pear crumble

    Make the classic crumble into something special with this almond and pear version. You could easily use another nut - walnuts, pecans or even pistachios - if almonds aren't your favourite.

    Serves: 8 

    • 650g peeled and thinly sliced pears
    • 1 tablespoon caster sugar
    • 5 tablespoons water
    • 60g plain flour
    • 75g porridge oats
    • 150g dark brown soft sugar
    • 1 teaspoon ground cinnamon
    • 1 pinch salt
    • 110g butter, softened
    • 125g flaked almonds

    1. Preheat oven to 180 C / Gas mark 4.
    2. Toss pears with caster sugar and water in a shallow 2 litre baking dish.
    3. In a large bowl, combine flour, oats, sugar, cinnamon and salt. Mix to blend thoroughly. Rub in the butter until mixture resembles coarse crumbs. Mix in almonds. Crumble over pears to cover completely.
    4. Bake for 40 to 45 minutes until top is lightly browned. Serve warm or at room temperature.
