Bacon wrapped chicken rolls

    A delicious appetizer or finger food for your party! Tender chicken breast is topped with cream cheese and thyme then wrapped in bacon and baked in the oven until hot and crisp.

    Makes: 12 chicken and bacon rolls

    • 1 large chicken breast fillet
    • 6 rashers bacon
    • 100g cream cheese
    • 2 tablespoons fresh thyme, chopped
    • 1 clove garlic, crushed
    • salt and pepper, to taste

    1. Preheat the oven to 180 C / Gas 4.
    2. Slice chicken breast lengthways into 6 thin slices and pound them flat with a meat mallet.
    3. Place bacon slices side by side onto a work surface and top each with a slice of chicken.
    4. In a small bowl mix together cream cheese, thyme, garlic, salt and pepper. Spread evenly over the chicken. Cut each bacon-chicken slice widthwise in half and roll up tightly. Secure each roll with a skewer and place them into a baking dish.
    5. Bake for 30 minutes in the preheated oven until chicken is no longer pink in the centre and bacon is browned.
