Quick pasta bake with tuna

    Necessity is the mother of invention! I made this pasta bake when I had nothing but frozen veggies, tinned soup and tuna. It turned out really tasty!

    Serves: 4 

    • 230g pasta, of your choice
    • 1 tin condensed cream of celery soup
    • 200ml milk
    • 1 (170g) tin tuna in water, drained
    • 100g frozen sweetcorn, thawed
    • 150g frozen broccoli florets, thawed
    • 100g frozen peas, thawed
    • 100g grated cheese
    • salt and pepper, to taste

    1. In a large saucepan of of boiling salted water cook pasta as instructed on the pack, or until al dente.
    2. Preheat oven to 220 C / Gas 7.
    3. In a small saucepan mix celery soup and milk and bring to the boil. Once it reaches the boil, remove from the heat.
    4. Drain pasta and combine in a casserole dish with tuna, sweetcorn, broccoli and peas. Add celery soup, half the cheese and salt and pepper and stir well. Top with the remaining cheese.
    5. Bake in the preheated oven for 30 minutes until cheese is melted. Remove from the oven and serve immediately.
