Red Thai chicken and broccoli curry

    This Thai curry with chicken, broccoli and spring onions is very easy and quick to prepare and tastes delicious. Goes well with basmati rice or rice noodles.

    Serves: 3 

    • 1 teaspoon olive oil
    • 2 chicken breast halves, cut in strips
    • 2 garlic cloves, minced
    • 1 1/2 teaspoons red thai curry paste
    • 250ml coconut milk
    • 1 teaspoon salt
    • 2 tablespoons caster sugar
    • 1 head broccoli, divided in florets
    • 3 spring onions, chopped

    1. In a large skillet heat oil and fry chicken for 2 to 3 minutes stirring frequently. Add garlic and curry paste and fry for 1 more minute until fragrant.
    2. Pour in coconut milk and add salt and sugar. Stir and add broccoli. Cover and simmer for about 7 minutes until broccoli is soft.
    3. Sprinkle spring onions on top and serve.
