Xmas in July plum pudding cheesecake

    In Australia we have this at Xmas. Being that it is stinking hot with 40+ C. This cheesecake is to die for. Use plain biscuit crumbs if you don't have chocolate. You can also use vanilla instead of rum extract.

    Serves: 8 

    • 200g plain chocolate biscuit crumbs
    • 1/4 teaspoon each nutmeg and cinnamon
    • 125g melted butter
    • Filling
    • 500g cream cheese
    • 150g sugar
    • 3 beaten eggs
    • 1 tablespoon rum or a 1/2 tsp of rum extract
    • 200g of mixed dried fruit

    Prep:20min  ›  Cook:1hr  ›  Extra time:8hr chilling  ›  Ready in:9hr20min 

    1. Prepare pastry case. Combine biscuit crumbs, nutmeg, cinnamon and butter. Press into a 20cm springform tin. Chill in the fridge for 30 minutes.
    2. Mix filling ingredients together and pour over prepared base.
    3. Bake slow to moderate oven (170-180 C / Gas 3-4) for 1 hour or till firm. (Place a bowl of water on the lower rack.)
    4. Cool in oven with door ajar. Refrigerate overnight before serving.


    Decorate with whipped cream and strawberries, fruit, etc.
