Sweet battered onion rings

    This is a quick easy recipe for battered onion rings, they always turn out light and fluffy, much more tasty than the dreaded frozen ones that turn to mush. I always use extra large onions, but use what ever you have.

    Serves: 4 

    • 4 extra large onions, cut into thick rings
    • 190g self raising flour
    • 60g cornflour
    • 1 egg
    • 1 teaspoon salt
    • 4 teaspoons sugar
    • milk, enough to make a thick batter that coats the back of a spoon
    • extra flour for dusting
    • oil for frying

    1. Make the batter by mixing the flour, cornflour, egg, salt, sugar and then the milk. Gradually add milk till you get the right consistency. Coat the onion rings with a light dusting of flour.
    2. Heat about 5cm (2 in) deep of oil, until a drop of batter rises to the surface.
    3. Dip the onion rings in the batter, and fry till golden brown, turning once. Drain on kitchen paper and serve.


    You could experiment with adding spices for a sweet onion ring with an after kick to it
