About this recipe:
This African side dish tastes really nice when served with chicken curry. If you don't have fine polenta, you can blitz regular polenta in a food processor.
400g maize flour or fine polenta
- Bring water to the boil in a large saucepan. Stir in maize flour and stir till water is absorbed. When absorbed, remove from heat and let rest 5 minutes. Serve with curry or fish.
You can adjust the consistency by using more or less maize flour.
