Basil, raspberry and feta crostini

    Salty feta cheese complements fruity raspberry jam, and the basil and olive oil add a savoury herbal note to these crostini. The measures here are for one crostini, so simply increase the quantities according to how many people you are serving.

    Serves: 1 

    • 1 thin slice baguette or crusty bread
    • 1 tablespoon raspberry jam
    • 1 thin slice feta cheese
    • 1 dash olive oil
    • 1 or 2 basil leaves, chopped

    1. Preheat the oven to 200 C / Gas 6.
    2. Spread the raspberry jam on the baguette slice. Top with feta and sprinkle with olive oil. Place on a baking tray.
    3. Bake in the preheated oven until the bread is golden and cheese melted, about 20 minutes. Sprinkle with fresh basil.
