Digestive biscuits with apricots and peaches

    An easy dessert but very tasty. Peaches and apricots are marinated in honey and lemon and served on plain biscuits.

    Serves: 6 

    • 2 to 3 fresh apricots, stoned and thinly sliced
    • 1 to 2 fresh peaches, peeled, stoned and cut into thin slices
    • 1 (250g) packet digestive biscuits or other plain biscuit
    • 1/2 lemon, juiced
    • 2 tablespoons honey
    • icing sugar

    1. Stir together the peaches, apricots, lemon juice and hone. Marinate for 10 to 15 minutes.
    2. Arrange slices of the fruits on a digestive biscuit, alternating a slice of peach with a slice of apricot. Sprinkle with icing sugar just before serving.


    You can use nectarines in place of peaches.
