Apple quark dessert

    This is a tiramisu inspired like but non alcoholic dessert with a layer of sponge fingers, topped with apple sauce and a creamy quark topping.

    Serves: 6 

    • 100g sponge fingers
    • 2 tablespoons coffee, sweetened to taste
    • 350g apple sauce
    • 400g quark
    • 125ml milk
    • 100g caster sugar
    • 200g whipping cream
    • unsweetened cocoa for dusting

    1. Place sponge fingers in a glass bowl with a flat bottom or a trifle bowl. Drizzle with coffee and spread with apple sauce.
    2. In a jug stir quark, milk and sugar.
    3. Whip cream in another jug and fold into the quark mixture. Spread on the apple sauce. Refrigerate till serving. Just before serving dust with cocoa.
