500g plain flour
3 dessertspoons olive oil
1 teaspoon salt
3 teaspoons baking powder
1L olive oil, for frying

In a small saucepan, combine the water, 3 dessertspoons olive oil, salt and baking powder. Bring to the boil. Once foaming, remove from heat and pour directly over the flour in a bowl. Stir well with a wooden spoon until you have a stiff dough.
Fill a churro pump with the dough; press to remove any pockets of air.
Heat 1 litre of olive oil in a wok or deep frying pan. Pump out the dough in 15-20cm lengths. Fry in the hot oil till golden. Fry in batches so that the pan isn't overcrowded.
Remove churros from the oil and drain on a piece of kitchen paper. Place on a serving platter and sprinkle with caster sugar. Enjoy with coffee or hot chocolate.
