Spanish lentil and chorizo stew

    This rustic lentil stew is quick to make in the pressure cooker and richly flavoured with Spanish chorizo.

    Serves: 4 

    • 1L water
    • 400g brown lentils
    • 1/2 Spanish chorizo sausage, sliced into 1cm pieces
    • 1 potato, peeled and chopped
    • 2 carrots, chopped
    • 1 bay leaf
    • 75ml extra virgin olive oil
    • 1 onion, chopped
    • 2 teaspoons sweet paprika

    1. In a pressure cooker, combine water, lentils, chorizo, potato, carrot and bay leaf. Close and cook under pressure for 10 minutes.
    2. Meanwhile, in a frying pan, cook the onion in the olive oil till soft. When soft, stir in the paprika. Remove from heat so that the paprika does not burn.
    3. When lentils are ready, stir in the onion and oil mixture. Serve and enjoy!

    I did this in the slow cooker- the opposite to pressure cooking really- but it was delicious and easy, a recipe I will come back to. Thanks  -  12 Dec 2012


    It seems to me you should be able to make this on the stove top in a normal pan. Lentils cook up rather quickly there really isn't a reason to use a pressure cooker. Unless the lentils in the UK are different than the ones here in the US. I haven't tried the recipe yet. I plan on doing so very soon. Will update my rating at that time.  -  12 Apr 2014


    This was nice. I did it in the slow cooker as well. I cooked for about 7.5 hours the first half on high and then turned downed to low. I added a tin of chopped tomatoes and would put some garlic in if I make again.  -  23 Feb 2014
