Thai green chicken thigh curry

    Chicken thighs are packed with flavour and great for curries. Serve with rice, naan bread and additional toppings such as sliced banana, fresh coriander and finely chopped chilli pepper.

    Serves: 4 

    • 2 tablespoons vegetable oil
    • 1 large onion, chopped
    • 1 green chilli, finely diced
    • 1 tablespoon Thai green curry paste
    • 4 boneless chicken thighs. cut into chunks
    • 1 (415g) jar Sharwoods(TM) Thai Cooking Sauce - Green curry
    • 200ml coconut milk, or as needed
    • Freshly chopped coriander for serving
    • Freshly chopped green chilli for serving
    • Sliced bananas for serving

    1. Heat oil over medium heat; gently fry onions and chilli pepper. Stir in curry paste.
    2. Add chicken thighs; stir in jar of cooking sauce and coconut milk.
    3. Simmer over low heat until chicken is cooked through, about 30 minutes. Serve with rice, fresh coriander, finely chopped green chillies and sliced banana.
