Creamy chicken curry salad

    The dressing is made with curry powder, honey, mango chutney, white wine, cream and mayonnaise. Add cooked chicken and garnish with flaked almonds, sliced pimento peppers and cucumber slices. Delicious!

    Serves: 6 

    • 4 tablespoons honey
    • 1 tablespoon medium curry powder
    • 4 tablespoons mango chutney
    • 60ml dry white wine
    • 140ml double cream
    • 280g mayonnaise
    • 1 whole cooked chicken, meat sliced and cubed
    • To garnish
    • flaked almonds, to taste
    • sliced pimento peppers, to taste
    • sliced cucumber, to taste

    1. Warm honey and curry powder in a saucepan over low heat for about 10 minutes.
    2. Add chutney and white wine; continue to stir over low heat for 4 or 5 minutes. Pass through a sieve and set aside to cool.
    3. Whip cream; fold into mayonnaise. Stir in curry mixture and cold chicken.
    4. Pile into a salad bowl and sprinkle with almonds, sliced pimentos and cucumber.
