Quorn® and kefir Bolognese sauce

About this recipe: This is a healthy vegetarian Bolognese sauce recipe that uses Quorn, veggies and kefir. Serve with your favourite pasta or over a jacket potato.

Serves: 4 

  • 2 tablespoons olive oil
  • 2 garlic cloves, crushed
  • 1/2 onion, chopped
  • 1 packet of minced Quorn®
  • salt and pepper to taste
  • mixed Italian herbs, to taste
  • chilli flakes, to taste (optional)
  • 1 (400g) tin chopped tomatoes
  • 4 tablespoons kefir
  • 10 button mushrooms, sliced
  • 1 courgette, chopped
  • 200g peas
  • a few leaves of basil

  1. Cook the garlic and onion in the olive oil. Once the onions go soft, add the Quorn®. Add seasoning, dried herbs and spices, and then toss in the tomatoes. Add the kefir and let it mix in with the tomatoes and Quorn® until it gets a nice creamy consistency.
  2. Cook the veggies in the microwave for 4 minutes with a tad bit of water. You can obviously steam them, or whatever you like, but the microwave cuts the time down. Add the veggies to the sauce. Put that sucker on your favourite pasta and you are all set for a super healthy and tasty meal. Garnish with basil leaves.
