    About this recipe: Fajitas are traditionally Mexican street food, but are enjoyed by thousands of people around the world for family meals. It can be tempting to buy pre-made mix to flavour the chicken and save some time, but following this recipe allows you to make a healthy and tasty meal whilst knowing everything that goes into it.

    Ingredients
    Makes: 6 chicken fajitas

    • 100ml water
    • olive or vegetable oil
    • 1 chicken stock cube
    • 1 tablespoon paprika
    • 1 large white onion, sliced
    • 1 red pepper, sliced
    • 60g jalapeno chillies
    • 2 chicken breast fillets, cut into strips
    • 1/2 a bag of fresh coriander
    • 1 (400g) tin chopped tomatoes
    • 80ml soured cream
    • 50g grated Cheddar cheese
    • 6 large flour tortillas

    Method
    Prep:20min  ›  Cook:30min  ›  Ready in:50min 

    1. Heat up 100ml of water with a small amount of oil in a wok or large frying pan. Add the stock cube, paprika and onion and allow to simmer until the mixture reduces and excess water has evaporated.
    2. Add the pepper and jalapenos and turn down the heat to low/medium. Add the chicken strips to the sauce.
    3. Wait for the chicken to cook and add the coriander to add depth of flavour. Add the chopped tomatoes and stir until they start reducing. Once the consistency looks to your liking, spoon in the soured cream and serve with grated cheese and the flour tortillas.
    4. Spoon the mixture generously onto the tortillas and roll. Serve with rice or salad.

    Tip

    Add guacamole too if you have some!

    Loved this !! I'm a fanatic for Mexican food and this is a really good recipe, I just added a few more jalapenos and some more cheese - I love my cheese and spice But overall its a really tasty recipe =D - 04 Sep 2013
