Strawberries and cream cupcakes

    Delicious recipe for basic cupcakes with an optional topping of fresh cream and strawberries. Makes 12 cupcakes.

    Serves: 12 

    • 110g butter or margarine, room temperature
    • 110g caster sugar
    • 3 medium eggs
    • 110g self raising flour
    • 1 teaspoon baking powder
    • 350ml double cream
    • 36 small strawberries

    1. Preheat oven to 180 C / Gas 4.
    2. Cream the butter and sugar in a bowl or mixing machine then add the eggs one at a time so they don't curdle. Fold in the flour and baking powder. Pour the mixture evenly into 12 cupcake cases.
    3. Bake for 15-20 minutes until risen and golden in colour. Leave to cool on a wire rack.
    4. If desired, top with cream and strawberries: once the cupcakes are nearly cool, whip the cream to stiff peaks and hull the strawberries.
    5. When the cupcakes are completely cool, spread the cream on top of each one and add three small strawberries on top.
    6. Enjoy!


    If you want to you can add a few drops of vanilla and a teaspoon of caster sugar to the cream to give it a subtle sweet flavour.
