About this recipe:I make this spicy and fresh tomato salsa when I have some leftover tomatoes, or during summer when we are growing more than we can eat. It keeps in the fridge for a few days and is best served with tortilla chips.
750g tomatoes, peeled and diced
1 small onion, finely chopped
1/2 to 1 jalapeno pepper, seeded and minced (or other green chilli pepper)
1 garlic clove, minced
1 handful fresh coriander, chopped
1 lime, juiced
salt and pepper, to taste

In a bowl combine all ingredients and mix well. Allow to marinade in the fridge for at least 1 hour. Serve at room temperature.
I made this adding some paprika for a smoky taste. Very simple, easy to do, and I used ingredients from my own garden! Also replaced coriander with basil, giving the whole thing a Mediterranean feel (coriander sparks my migraine). Great with warm fresh bread!
