I make this spicy and fresh tomato salsa when I have some leftover tomatoes, or during summer when we are growing more than we can eat. It keeps in the fridge for a few days and is best served with tortilla chips.
I made this adding some paprika for a smoky taste. Very simple, easy to do, and I used ingredients from my own garden! Also replaced coriander with basil, giving the whole thing a Mediterranean feel (coriander sparks my migraine). Great with warm fresh bread!
