Classic tomato salsa

    I make this spicy and fresh tomato salsa when I have some leftover tomatoes, or during summer when we are growing more than we can eat. It keeps in the fridge for a few days and is best served with tortilla chips.

    Serves: 12 

    • 750g tomatoes, peeled and diced
    • 1 small onion, finely chopped
    • 1/2 to 1 jalapeno pepper, seeded and minced (or other green chilli pepper)
    • 1 garlic clove, minced
    • 1 handful fresh coriander, chopped
    • 1 lime, juiced
    • salt and pepper, to taste

    1. In a bowl combine all ingredients and mix well. Allow to marinade in the fridge for at least 1 hour. Serve at room temperature.

    I made this adding some paprika for a smoky taste. Very simple, easy to do, and I used ingredients from my own garden! Also replaced coriander with basil, giving the whole thing a Mediterranean feel (coriander sparks my migraine). Great with warm fresh bread! Or add some stock and allow to cool for a tasty gazpacho!  -  03 Oct 2015
