Italian summery pasta salad

    A nutritious and fresh tasting pasta salad, ideal for a picnic or packed lunch, or even a light summer supper.

    Ingredients
    Serves: 4 

    • 400g small shaped pasta
    • 5 tablespoons olive oil
    • 1 glassful of peas (fresh or frozen)
    • 3 hard boiled eggs, peeled and chopped
    • 10 cherry tomatoes, halved
    • 10 black olives, pitted
    • 100g ham, diced
    • 1 tin of tuna, drained
    • 1 tablespoon capers
    • 2 artichoke hearts, chopped
    • 2 mozzarella balls, diced
    • 100g grated Parmesan cheese
    • salt and freshly ground black pepper, to taste

    Method
    Prep:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Cook the pasta in salted water according to the packet directions, then drain and put it in a bowl.
    2. Cook the peas in a pan for 15 minutes with 1 tablespoon of the olive oil. Remove from heat.
    3. Combine all remaining ingredients with the peas and pasta. Enjoy!
