Courgette salad with mint

    A fresh summer salad with uncooked courgettes and a light lemon-mint dressing ideal for serving alongside barbecue fare.

    • 60ml olive oil
    • 2 tablespoons lemon juice
    • 2 tablespoons fresh mint, minced
    • 1/4 teaspoon salt
    • 1 pinch cayenne pepper
    • 6 cougettes, thinly sliced

    1. In a salad bowl combine the olive oil, lemon juice, mint, salt and cayenne. Add courgettes and toss. Chill covered in the fridge until time to serve.

    After tasting, I thought the olive oil was a bit too dominant, so I added more lemon juice, salt & cayenne to suit my taste. This was a nice complement to a tuna fish sandwich for lunch.  -  25 Feb 2015
