Tortilla wraps with sweetcorn tomato filling

    This is a vegetarian filling for tortillas. It is enough for 2 to 3 tortillas but it can be easily doubled or tripled.

    Serves: 2 

    • 2 tablespoons oil
    • 1 medium onion, minced
    • 300g frozen sweetcorn
    • 3 medium tomatoes, diced
    • 1 teaspoon mole sauce paste
    • salt
    • minced fresh coriander
    • 2 to 3 wheat tortillas
    • soured cream
    • grated Cheddar cheese

    1. Heat oil in a large frying pan. Fry onion whilst stirring till translucent. Add sweetcorn, tomatoes and mole and stir well to combine. Cover with lid and simmer at low to medium heat for 10 minutes whilst stirring every so often. Usually the tomatoes release enough juice, if not, add a few tablespoon water to prevent burning. Season with salt and add coriander, stir. Remove from the hob.
    2. Wipe out the pan with a clean kitchen paper and heat tortilla wraps in the pan one after the other over high heat till they puff up and brown a little.
    3. Spread sour cream on each tortilla, add filling in the centre and sprinkle with cheese. Roll up or fold like an envelope and place seam side down on a baking tray.
    4. Place baking tray on top shelf of your oven, turn on the grill and leave till tortilla is slightly browned and cheese is melted.
