Courgettes and tomatoes

    Tasty easy side dish with courgettes, tomatoes, bacon and cheese. No problem to getting my kids to eat their veggies with this recipe!

    Serves: 4 

    • 40g bacon, diced
    • 1 to 1.5kg courgettes, quartered and cut into 5cm long pieces
    • 2 onions, sliced
    • 3 to 4 tomatoes, quartered
    • salt, to taste
    • 10g plain flour
    • 3 to 4 tablespoons cream or milk
    • chopped fresh dill, to taste
    • chopped fresh parsley, to taste
    • grated cheese of your choice, to taste

    1. In a large frying pan cook the bacon over a medium heat until crisp and brown. Add courgettes and onions and fry for a few minutes. Stir in tomatoes and add salt to taste. Cook until tomatoes start to fall apart and courgettes and onions are soft. Add just a little water, if necessary.
    2. Sprinkle flour over and pour in cream and stir well. Add the fresh dill and parsley and serve with cheese sprinkled on top.
