Pork with mushrooms and apples

    Thin slices of pork fillet cooked with apples and mushrooms in a delicious mustard, garlic and ginger sauce. Delicious with mashed potatoes or rice.

    Serves: 4 

    • 1 or 2 tablespoons olive oil
    • 1 pork fillet, thinly sliced
    • 2 cloves garlic, crushed
    • 1 tablespoon freshly grated ginger or 1 teaspoon dry ginger
    • 1 heaped teaspoon mustard powder
    • 225ml white wine or chicken stock
    • 2 apples, peeled, cored and sliced
    • 100g mushrooms, sliced
    • Salt and pepper to taste
    • 2 spring onions, sliced

    1. Heat oil in a large frying pan over high heat. Cook the pork fillet slices, in batches if necessary, until browned.
    2. Add garlic, ginger and mustard powder and stir to coat the pork. Pour in white wine or stock; lower heat and simmer for 5 or 10 minutes.
    3. Add apples and mushrooms; continue to cook until apples have softened slightly, about 10 minutes.
    4. Season to taste; add spring onions, stir and serve.

    Just made this dish. It was very simple to make. It tasted beautiful. Full of flavour. I served wilted spinach, pac choi and mashed potato with it. I omitted the wine as I'm doing slimming world and replaced the oil with fry light. I will be recommending this recipe to my slimming world group.  -  26 Jul 2015
