The trick to this super tasty salad is that I caramelise red onions with raspberry vinegar before adding them to the salad - delicious!

Ingredients
Serves: 6
2 large red onions, thinly sliced into rings
4 tablespoons raspberry vinegar, more for the dressing
750g green beans
olive oil, to taste
salt and pepper, to taste
125g blue cheese
Method Prep:10min › Cook:30min › Ready in:40min
Preheat oven to 200 C / Gas 6 and lightly grease a baking tray.
Spread the onion rings over the baking tin and sprinkle with vinegar.
Roast in the oven until brown for 20 to 30 minutes, turning occasionally. Remove from the oven and allow to cool.
Meanwhile cook beans uncovered in a large saucepan of boiling water for 3 minutes. Pour into a colander, dip into ice water and drain well.
Let beans cool down and mix with cooled onions in a bowl. Add olive oil, raspberry vinegar, salt and pepper to taste and crumble blue cheese on top. Serve immediately.
