Fattoush (Middle Eastern pitta salad)

    Fattoush is a Levantine salad made with pitta bread. It can be served as a side or a great light lunch or supper on a hot summer day.

    Ingredients
    Serves: 6 

    • 2 pitta breads
    • 1 red onion, chopped
    • 2 cucumbers, diced
    • 4 tomatoes, diced
    • 1 bunch fresh parsley, chopped
    • some fresh coriander, chopped
    • 1 garlic clove, minced
    • 1 lemon, juiced
    • 60ml olive oil
    • 1 teaspoon salt
    • ground black pepper to taste

    1. Preheat oven to 175 C / Gas 3-4.
    2. Toast pitta breads in the preheated oven until crunchy, 5 to 10 minutes. Remove from the oven and break or cut into bite sized pieces.
    3. In a salad bowl combine pitta pieces, onions, cucumbers, tomatoes, coriander and parsley. Mix well.
    4. In a small bowl or cup stir together garlic, lemon juice, olive oil, salt and pepper. Pour over the salad and toss.
