1 tablespoon olive oil
1 small onion, thinly sliced
1 courgette, diced
2 tomatoes, skin removed and diced
1/2 green pepper, seeded and diced (optional)
1 to 2 garlic cloves, chopped
salt and pepper, to taste
1 tablespoon Parmesan cheese, grated
fresh parsley, chopped

In a large deep frying pan over a medium heat, warm the olive oil and cook onion until soft. Add courgette, tomatoes, pepper and garlic and simmer uncovered for 8 to 10 minutes over low heat until vegetables are soft. Season with salt and pepper, stir in Parmesan and sprinkle with fresh parsley. Serve hot.
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
