About this recipe: This apple rice pudding is baked in the oven and tastes best served warm. I make it with apples, but it also tastes great with peaches or pears.


Serves: 4 

  • 250g short-grain rice
  • 1L milk
  • 1 pinch salt
  • 3 tablespoons caster sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 500g apples, peeled, cored and thinly sliced
  • 1 tablespoon ground cinnamon
  • 50g butter

  1. In a saucepan combine rice, milk, salt and 1 tablespoon sugar. Bring to the boil, reduce the heat to low, cover and simmer for about 15 minutes until rice is soft.
  2. Preheat oven to 200 C / Gas 6.
  3. Add vanilla, egg and remaining sugar to the rice and mix well.
  4. In a small bowl mix apple slices with cinnamon. Grease a baking dish and place a layer of apples on the bottom. Spoon rice on top and add another layer of apples. Add a last layer of rice, dot with butter and bake for 1 hour.
