Cinnamon cookies

    I first made these cookies two years ago in my food technology class and I have made these all the time because they disappear fast. I also love to put a small handful of chocolate chips in the mixture but that is completely up to you.

    Makes: 48 cookies

    • 200g caster sugar
    • 110g butter
    • 1 large egg
    • 1 teaspoon vanilla
    • 190g plain flour
    • 1 1/2 teaspoons ground cinnamon
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • cinnamon sugar to coat

    1. In a mixer bowl, cream together sugar and butter; beat in egg and vanilla.
    2. Combine flour, cinnamon, baking powder and salt. Add to butter mixture. Blend well. Cover and chill in the fridge for 2 hours or till firm enough to roll into balls.
    3. Shape dough into small balls about 2cm in diameter. Roll in cinnamon sugar to coat. Place on baking tray lined with parchment.
    4. Bake at 180 C / Gas 4 for 10 minutes or till the edges are lightly browned. Cool slightly on tray, then remove to rack to cool completely.

    Omg, these taste amazing, and added chop chips to! Only prob i had was the fact that even though i spreaded the ball fairly far apart they melted into one big cookie, what did i do wrong? I assumed as they were ball shaped they wouldnt flatten quite as much, but as i said taste amazing, so who cares what they look like eh, and the mixture makes loads! Thanks. :0)  -  21 Dec 2013
