Sweet coconut chicken curry

    This is a quick and easy curry to make, a great one pot dish for a family who love curry. Don't forget the naan bread.

    Serves: 4 

    • 5 tablespoons olive oil
    • 4 large chicken breasts
    • 1 teaspoon mustard seeds
    • 3 medium onions, chopped
    • 1 1/2 teaspoon ground ginger
    • 3 chillies, finely chopped
    • 1 teaspoon ground cumin
    • 1 tablespoon ground coriander
    • 1 tablespoon hot chilli powder, or to taste
    • 1 tablespoon garam masala
    • 1 teaspoon tumeric
    • 1/2 teaspoon salt
    • 5 tablespoons vinegar
    • juice of 1/2 lemon
    • 350ml coconut milk
    • 4 tablespoons sweet chilli sauce

    1. Heat oil in large saucepan, add chicken and fry until browned then transfer to a plate.
    2. Add mustard seeds and cover pan. When they have stopped popping add onions, fry until golden, then add ginger, garlic and chilli and fry for 2 minutes.
    3. Put spices, salt, vinegar and lemon juice in a bowl and mix to a smooth paste. Add paste to saucepan and fry for 5 minutes.
    4. Add chicken and coat with paste and fry for 3 minutes, then add coconut milk and sweet chilli sauce and bring to the boil. Reduce heat and simmer for 30 minutes until chicken is tender and sauce is thick.


    Preparation and cooking time 1 hour. Serve with Palau rice,nann bread and cold green grapes.
