Bakewell flapjack
If you like flapjack, and you like almonds/bakewell, then you'll love this! Especially with your favourite jam. Eat as a snack or try it with custard. I used to have this type of thing at school served with custard. Couldn't find a recipe, so made up one. Yum! you'll be surprised. Please leave a comment or rate if you can. Thanks! Happy baking.
Ingredients
Makes: 8 pieces
- 100g ordinary oats
- 30g plain flour
- 50g ground almonds
- pinch of salt
- 85g unsalted butter, melted
- 1 teaspoon almond extract or essence
- 1 tablespoon golden syrup
- 1 tablespoon jam of your choice (raspberry, plum)
- flaked almonds
- white chocolate (optional)

- Preheat oven to 170 C / Gas 3. Grease a small baking tin about 14x14cm.
- Put oats, flour, ground almonds and salt in a mixing bowl and stir till mixed.
- Stir in melted butter. Add almond extract and golden syrup and mix. If you find it a bit dry, then add some more melted butter or golden syrup if you want. However if too wet, then add more oats!
- Spoon half the mix into prepared tin and press down with back of fork, fingers or back of spoon until in the corners squashed altogether. (May be a bit sticky, not too bad though.) Make sure fully pressed down, otherwise flapjacks will become crumbly.
- Spread over jam, not completely to edges as will spread out when cooking.
- Spoon over the rest of oat mix on top and press down flat. Sprinkle with almonds if you wish.
- Bake for around 15-25 minutes depending on your oven on middle shelf till edges become golden. Do not overcook as will become dry, so keep an eye on it.
- If desired, when cool, drizzle the flapjacks with melted white chocolate.
