Little vanilla cupcakes

    Makes: 10 cupcakes

    • For the cupcakes
    • 5 tablespoons self-raising flour
    • 1/2 teaspoon baking powder
    • 1 pinch salt
    • 1 tablespoon semi-skimmed dried milk
    • 4 tablespoons softened butter or margerine
    • 150g caster sugar
    • 1 teaspoon vanilla extract
    • 1 medium egg
    • 3 tablespoons milk
    • For the icing
    • 4 tablespoons icing suar
    • 1 teaspoon semi-skimmed dried milk
    • 1 1/2 tablespoons softened butter

      For the cupcakes:

    1. Preheat the oven to 180 C / Gas 4.
    2. Mix together the flour, baking powder, salt and dried milk in a mixing bowl.
    3. In another bowl, cream the butter and sugar then add the vanilla extract. Mix well. Add the egg and milk. Mix until soft, creamy and able to pour. Pour the mixture into the cupcake cases or tray.
    4. Bake in the preheated oven for about 20 minutes or until golden. Remove from the oven and allow to cool.
    5. For the icing:

    6. Mix together icing sugar, dried milk and butter until a creamy paste.
    7. When cakes are ready and cool, pour about 1/2 a teaspoon icing on each cupcake.
