Makes: 12 strawberry cupcakes
For the cupcakes
150g soft unsalted butter
125g caster sugar
225g plain flour
1 1/2 teaspoons baking powder
1 pinch salt
1 packet vanilla sugar

200g icing sugar

For the cupcakes:
Preheat oven to 170 C / Gas 3. Grease a 12-hole muffin tin or line with cupcake papers.
In a bowl, cream together the butter and sugar. Beat in one egg at the time and mix well after each addition.
In a second bowl mix together flour, baking powder and salt.
Purée the strawberries with vanilla sugar in a food processor. Reserve half of the strawberry purée aside for the icing.
Add flour mixture and the other half of the strawberry purée to the butter mixture and stir until just combined. Don't over mix.
Fill muffin tins or cupcake cases up to 2/3 with cake mixture.
Bake in the preheated oven for about 22 minutes until a skewer inserted in the centre comes out clean. Remove from the oven and allow to cool just slightly.
Remove cupcakes from the tin and set onto a cooling rack.
To make the icing:
To make the icing, cream the butter with an electric mixer. Stir in reserved strawberry purée and gradually add icing sugar until the icing has the right consistency. Add more sugar if needed.
Spread icing onto the cooled cupcakes and decorate to taste.
Vanilla sugar is generally available in supermarkets nowadays, however, in a pinch substitute 1 teaspoon of vanilla extract to every 2 teaspoons vanilla sugar.
