Apple custard tart

    This unforgettable apple tart gets added richness from custard baked right in. This tart is surprisingly easy to make!

    Serves: 8 

    • For the apple filling
    • 60g butter
    • 2 tart apples - peeled, cored and sliced
    • 100g caster sugar
    • 1/2 teaspoon ground cinnamon
    • For the custard
    • 60g butter, softened
    • 75g caster sugar
    • 4 eggs
    • 1 teaspoon vanilla extract
    • 2 tablespoons plain flour
    • 180ml buttermilk
    • 1 (23cm) shortcrust pastry case

    1. Preheat oven to 150 C / Gas 2.
    2. For the apple filling:

    3. Melt 60g butter in a frying pan over medium heat. Add apple, caster sugar and cinnamon. Cook 3 to 5 minutes, until tender. Set aside.
    4. For the custard:

    5. In a large mixing bowl combine 60g softened butter with 75g sugar. Beat until creamy. Add eggs one at a time, beating until pale and the yellow disappears. Mix in vanilla, then 2 tablespoons flour. Combine thoroughly, then pour in buttermilk, beating until smooth.
    6. Prick bottom of pastry case with a fork. Spoon in apple mixture, then pour custard over it.
    7. Place in preheated oven and bake for 1 to 1 1/4 hours, until a knife inserted in the centre comes out clean. Let cool for 1 hour before slicing.
