Apple almond pudding

    This apple almond pudding is just heavenly. Serve with custard or even try toffee sauce for a different twist.

    Serves: 4 

    • 170g softened butter
    • 150g caster sugar
    • 3 eggs
    • 90g self raising flour
    • 90g ground almonds
    • 1 teaspoon ground cinnamon (optional)
    • 1 pinch salt
    • 3 apples - peeled, cored and chopped
    • 1 handful flaked almonds

    1. Preheat the oven to 200 C / Gas 6. Grease a round 20cm baking dish.
    2. Beat together the butter and sugar till pale and fluffy. Add the eggs one at a time, beating after each addition.
    3. Mix the flour, ground almonds, cinnamon and salt together. Gently stir into the butter mixture till smooth. Fold in the chopped apples.
    4. Spoon mixture into prepared tin. Sprinkle with flaked almonds over the top.
    5. Bake in the preheated oven for 20 to 30 minutes, or until golden brown and a knife inserted in the centre comes out clean. Serve warm with cream or custard.
