1 large onion, diced
3 tablespoons olive oil, plus more for frying
500g courgettes, grated
3 tablespoons plain flour
ground black pepper to taste
8 mint leaves, finely chopped
3 sprigs fresh dill, finely chopped
200g feta cheese, mashed with a fork

Heat oil in a large pan over medium heat. Add onion and cook until softened. Stir in grated courgette and cook for 3 to 5 minutes to soften.
Combine eggs, flour, black pepper, mint and dill in a bowl; stir well. Add feta and courgette-onion mixture.
Heat a generous amount of oil in a non-stick pan; spoon a heaped tablespoon of the fritter mixture into the pan and cook until golden brown on one side. Flip and fry on the other side. Repeat with the remaining batter.
