Turkish courgette fritters (Kabak Mücveri)

About this recipe: This is a delicious recipe for Turkish fritters that uses grated courgette, fresh mint and feta cheese. Serve hot or cold with yogurt or garlic sauce.


Serves: 4 

  • 1 large onion, diced
  • 3 tablespoons olive oil, plus more for frying
  • 500g courgettes, grated
  • 3 eggs
  • 3 tablespoons plain flour
  • ground black pepper to taste
  • 8 mint leaves, finely chopped
  • 3 sprigs fresh dill, finely chopped
  • 200g feta cheese, mashed with a fork

  1. Heat oil in a large pan over medium heat. Add onion and cook until softened. Stir in grated courgette and cook for 3 to 5 minutes to soften.
  2. Combine eggs, flour, black pepper, mint and dill in a bowl; stir well. Add feta and courgette-onion mixture.
  3. Heat a generous amount of oil in a non-stick pan; spoon a heaped tablespoon of the fritter mixture into the pan and cook until golden brown on one side. Flip and fry on the other side. Repeat with the remaining batter.
