The best chicken curry

    Sometimes the simple things in life are the best! This chicken curry is something I've made again and again and it has never let me down! This one is around mild to medium - so just add a bit of extra chilli powder if you're after a kick!

    Serves: 4 

    • 1 to 2 tablespoons oil
    • 1 medium onion, finely chopped
    • 2 cloves garlic, crushed
    • 1 teaspoon chilli powder
    • 1 teaspoon ground coriander
    • 1/2 teaspoon turmeric
    • 4 cardamom pods
    • 1/2 teaspoon salt
    • 4 chicken thighs, skin off but leave bone in - adds great flavour
    • 4 tablespoons passata
    • 4 tablespoons plain yoghurt

    1. Heat oil in a pan, add onions and fry until well browned. Add garlic, all spices, salt and 1 to 2 tablespoons water, and fry for a further minute.
    2. Add chicken and mix well to coat with spice mixture. Cook for around 5 minutes or until the chicken has some colour.
    3. Add one cupful of water, cover and leave to simmer for 45 minutes or until chicken is cooked through.
    4. Remove lid, add passata and yoghurt and cook for 5 minutes with lid off to let the sauce thicken. If it's too thin just cook a little further to let it reduce, or add a little water if you want more sauce.
    5. Serve with rice or naan - delicious!


    Tastes great with a simple raita. Also this takes me around an hour, so if you don't have the time or the spices there are some great curry kits on the market - Muzzah Curry Kits are my favourite - try the jalfrezi one, it's fantastic!
